Makes approximately 4 servings

Ingredients:

  • 6-7 red potatoes, peeled and sliced (1/4 inch thick)
  • 1 medium yellow onion, sliced
  • 1/2 green bell pepper, chopped
  • 1 1/2 teaspoons salt
  • 1 teaspoon pepper
  • 1 1/2 teaspoons Italian seasoning
  • 3 tablespoons butter, melted
  • 1 1/2 pound hot Italian sausage, cut into 1-inch slices

Directions:

  • Heat oven to 375 degrees
  • Place the potatoes, onions and bell peppers in a 1 1/2 quart Pyrex casserole dish.
  • Toss to mix ingredients well
  • Add salt, pepper and Italian seasoning to dish. Cover with the melted butter
  • Add the sausage to the top of the potato mixture
  • Cover dish and place in oven. Cook for 1 hour, or until sausage is cooked and potatoes are tender
